Step 1: Prepare the Lamb Shanks

  1. Season the lamb shanks generously with salt and black pepper on all sides.
  2. In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat until shimmering.
  3. Sear the lamb shanks in the hot oil, turning occasionally, until they are browned on all sides. This should take about 8-10 minutes. Remove the lamb shanks from the pot and set aside.

Step 2: Sauté the Vegetables

  1. In the same pot, add the chopped onion, carrots, and celery. Cook over medium heat, stirring occasionally, until the vegetables are softened and beginning to caramelize, about 10 minutes.
  2. Add the minced garlic and cook for another 1-2 minutes, until fragrant.

Step 3: Deglaze and Add Liquids

  1. Deglaze the pot with the red wine, if using, scraping up any browned bits from the bottom of the pot. Cook for 2-3 minutes until the wine has reduced slightly.
  2. Stir in the beef broth, diced tomatoes (with their juice), and tomato paste, mixing well to combine.
