GARLIC BUTTER SEAFOOD BOIL

Ingredients:

  • 2 pounds large shrimp, shell-on
  • 1 pound crab legs
  • 1 pound clams
  • 1 pound mussels
  • 1 pound smoked sausage, sliced
  • 1 pound baby potatoes, halved
  • 4 ears of corn, shucked and cut into thirds
  • 1/2 cup (1 stick) unsalted butter
  • 6 cloves garlic, minced
  • 2 tablespoons Old Bay seasoning
  • 1 tablespoon Cajun seasoning
  • 1 lemon, sliced
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste

Directions:

  1. In a large stockpot or Dutch oven, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
  2. Stir in the Old Bay seasoning and Cajun seasoning, then add the sliced sausage, halved potatoes, and corn pieces to the pot. Cook for 5-7 minutes, stirring occasionally.
  3. Add enough water to the pot to cover the ingredients by about an inch. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10-15 minutes, or until the potatoes are fork-tender.
  4. Once the potatoes are tender, add the crab legs, clams, mussels, and sliced lemon to the pot. Cover and simmer for an additional 5-7 minutes, or until the seafood is cooked through and the clams and mussels have opened.
  5. Finally, add the shrimp to the pot and cook for 3-4 minutes, or until they turn pink and opaque.
  6. Season the Garlic Butter Seafood Boil with salt and pepper to taste, then garnish with chopped parsley.
  7. Serve the seafood boil hot, straight from the pot, with plenty of crusty bread or garlic bread on the side for soaking up the delicious broth.
