Recipe: Pork Adobo

Ingredients:

  • 2 pounds pork shoulder, cut into 1-inch cubes
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon whole peppercorns
  • 1 tablespoon brown sugar
  • 1 tablespoon cooking oil
  • 1/2 cup water
  • Sliced green onions and toasted garlic flakes for garnish (optional)

Directions:

  1. In a large bowl, combine the soy sauce, white vinegar, minced garlic, bay leaves, peppercorns, and brown sugar. Stir until the sugar is dissolved.
  2. Add the pork cubes to the marinade and toss to coat them evenly. Cover the bowl and marinate the pork in the refrigerator for at least 30 minutes, or up to overnight for maximum flavor.
  3. Heat the cooking oil in a large skillet or Dutch oven over medium-high heat. Add the marinated pork cubes (reserving the marinade) and cook until browned on all sides, about 5-7 minutes.
  4. Pour the reserved marinade over the browned pork cubes and add the water. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and cover the skillet or Dutch oven with a lid. Simmer the pork adobo for 1-1.5 hours, or until the pork is tender and the sauce has thickened, stirring occasionally.
  6. Once the pork is tender, taste the sauce and adjust the seasoning if needed, adding more soy sauce, vinegar, or sugar to taste.
  7. Serve the Pork Adobo hot over steamed rice, garnished with sliced green onions and toasted garlic flakes, if desired.
