EASY POTATOES FOIL PACKET

Ingredients:

  • 4 medium potatoes, washed and thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional toppings: shredded cheese, bacon bits, sour cream, green onions

Directions:

  1. Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).
  2. Tear off four large pieces of aluminum foil, each about 12 inches long.
  3. In a large bowl, toss the thinly sliced potatoes with olive oil, garlic powder, onion powder, dried thyme, salt, and pepper until evenly coated.
  4. Divide the seasoned potatoes evenly among the pieces of aluminum foil, placing them in the center of each foil sheet.
  5. Fold the sides of the foil over the potatoes to create a packet, folding and crimping the edges to seal tightly.
  6. If grilling, place the foil packets directly on the grill grates and cook for 20-25 minutes, or until the potatoes are tender, flipping halfway through.
  7. If baking, place the foil packets on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the potatoes are tender.
  8. Once cooked, carefully open the foil packets and transfer the potatoes to a serving dish.
  9. Garnish the Easy Potatoes Foil Packets with chopped fresh parsley and any optional toppings you desire.
  10. Serve hot and enjoy!
