Delicious & Healthy Chinese Egg Rolls

Ingredients:

For the Egg Rolls:

  • 12 egg roll wrappers
  • 2 cups shredded cabbage or coleslaw mix
  • 1 cup shredded carrots
  • 1 cup thinly sliced bell peppers (any color)
  • 1 cup cooked and shredded chicken, tofu, or shrimp
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Cooking spray

For the Dipping Sauce:

  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon chopped green onions (optional)

Directions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine the shredded cabbage, carrots, bell peppers, and cooked chicken, tofu, or shrimp.
  3. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, grated ginger, minced garlic, salt, and pepper to make the marinade.
  4. Pour the marinade over the vegetable and protein mixture and toss until evenly coated.
  5. Place an egg roll wrapper on a clean work surface with one corner pointing toward you. Spoon about 1/4 cup of the filling onto the center of the wrapper.
  6. Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll tightly to seal. Repeat with the remaining wrappers and filling.
  7. Place the rolled egg rolls seam-side down on the prepared baking sheet. Lightly spray the tops of the egg rolls with cooking spray.
  8. Bake in the preheated oven for 18-20 minutes, or until the egg rolls are golden brown and crispy.
  9. While the egg rolls are baking, prepare the dipping sauce by whisking together the soy sauce, rice vinegar, honey or maple syrup, sesame oil, grated ginger, minced garlic, and chopped green onions, if using.
  10. Remove the egg rolls from the oven and let them cool for a few minutes before serving with the dipping sauce on the side.
