Authentic Cajun Jambalaya Recipe

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 pound smoked sausage, sliced
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 cup long-grain white rice
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 pound shrimp, peeled and deveined
  • Chopped fresh parsley, for garnish
  • Sliced green onions, for garnish

Directions:

  1. In a large skillet or Dutch oven, heat the vegetable oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5 minutes.
  2. Add the diced chicken thighs to the skillet and cook until browned on all sides, about 5-7 minutes. Remove the sausage and chicken from the skillet and set aside.
  3. In the same skillet, add the diced onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  4. Add the minced garlic to the skillet and cook for an additional minute, until fragrant.
  5. Stir in the diced tomatoes (with their juices), chicken broth, rice, Cajun seasoning, dried thyme, dried oregano, and bay leaf. Season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer, covered, for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
  7. Once the rice is cooked, return the sausage and chicken to the skillet, along with the peeled and deveined shrimp. Cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.
  8. Remove the bay leaf from the skillet and discard.
  9. Garnish the Jambalaya with chopped fresh parsley and sliced green onions before serving.
