INGREDIENTS:

  • 8 chicken thighs skin trimmed to remove excess fat
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • Salt pepper, and paprika for seasoning
  • ¼ cup all-purpose flour
  • 14.5 ounce can chicken broth
  • ½ cup cooking Sherry
  • 1 teaspoon minced garlic
  • 1 teaspoon crushed rosemary
  • ¼ pound white mushrooms sliced
  • 14 ounce can artichoke hearts rinsed and drained
  • Parsley for garnish
